At the heart of Indian cuisine is the tandoor—an ancient clay oven known for its unique ability to deliver intense, wrap-around heat. This traditional cooking method, dating back centuries, uses dry chopped timber as fuel and can reach temperatures up to 800°F. Built from natural clay and plastered with mud, a tandoor can be prepared for use within a few days and is often referred to as a sanjha chulha, or "common oven," in many parts of India.

The Clay Oven in New Jersey brings this time-honored tradition to life. Founded in 1999 by Jitu Mehta, a seasoned restaurateur with nearly 30 years of experience rooted in the vibrant culinary scene of Bombay (Mumbai), this restaurant is a true labor of love.

Jitu Mehta has personally designed the menu, infusing each dish with authentic flavors and a commitment to quality. He credits much of the restaurant’s success to his dedicated team—whom he proudly calls his associates—not just staff.
